Another Cypriot cheese declared a product with protected geographical indication
The European Commission has declared the Cypriot cheese "Halitzia Tyllirias," also known as "Helik Cheese," as a product with a protected geographical indication (PGI).
The representation of the European Commission in Cyprus notes that the inclusion of the considered Cypriot cheese in the registry of geographical indications was approved by the commission the day before.
In the statement, a definition was provided for the "Helik" cheese as "Soft or semi-hard white cheese, made from thermally processed raw goat's milk, rennet (excluding pig stomach), and salt."
It is also reported that the said cheese is aged in brine for at least forty days and has characteristic irregularly shaped holes of various sizes and forms, with a soft or semi-hard and relatively brittle texture.
The cheese has a slightly acidic taste, a lemony hint, and a light saltiness.
It was also stated that knowledge about the production of the considered cheese has been passed down from generation to generation in Cyprus. Now, this product has been added to the registry of Protected Geographical Indications (PGI).
