  • Olive oil
  • Salt and black pepper to taste
  • Fresh herbs (oregano or parsley) for garnish

Preparation

  1. Preheat the oven to 200°C.
  2. Peel the shrimp, remove the intestinal vein, rinse, and pat dry.
  3. In a bowl, mix the shrimp with a small amount of olive oil, juice of half a lemon, half a teaspoon of oregano, salt, and minced garlic. Let it marinate.
  4. Finely chop the onion.
  5. In a pan, heat olive oil and quickly sauté the shrimp until they change color slightly (about 30 seconds). Transfer them back to the bowl.
  6. In the same pan, sauté the onion until soft.
  7. Add the tomatoes, sugar, the remaining oregano, salt, and pepper to the onion. Bring to a boil, then pour in the wine and cook the sauce for 5-10 minutes until it thickens.
  8. Return the shrimp to the pan with the sauce, sprinkle with feta cheese and fresh herbs.
  9. Transfer the pan to the oven and bake for about 10 minutes, until the feta is soft and slightly golden.
  10. Serve hot with toasted bread and a glass of white wine.
